Clarified butter with multiple health benefits, this has been widely used in Indian and Ayurvedic cooking for centuries.

Ayurveda considers ghee to be the ultimate cooking oil as it is endowed with many benefits for the body and mind. It is said to provide youth and longevity and is considered the purest and noblest of fats.

Ghee, healthier than butter

According to the traditional Indian method, ghee is obtained by cooking butter at a long and very (very) slow temperature. The elements that make it up are then dissociated and filtered. Only the pure fat is kept: the ghee.

Still little known in Europe, this fat has numerous advantages. First of all in cooking because, unlike butter as we consume it in the West, ghee does not oxidize.

In fact, the process of clarifying butter allows only a portion of its components to be retained, these having the particularity of keeping much longer than a conventional butter, even at room temperature. Placed in a closed jar, ghee can be kept for a long time, preferably in a dry place away from heat and light. There is no need to place it in the refrigerator. It can be kept for at least one year in good conditions.

Furthermore, ghee supports cooking very well, m even at high temperatures since it  it does not blacken, unlike butter.

Ghee is also good news for vegans. Rid of its milk proteinsIt is also suitable for people who are sensitive or intolerant to lactose and casein.

It is always possible to buy them at the health food store, but doing so remains a renewed pleasure and less expensive. To consume with moderation all the same because the ghee remains a fatty substance.
With its many health benefits, it's definitely worth looking into.
