Red yeast, from the Latin name Monascus purpureus, is an interesting food to consume. Red yeast contains monacolin K. This is the substance's main active ingredient, and is present in this dietary supplement at a level of 1.6%. Red rice is used in traditional Chinese medicine. Monacolin K is identical to lovastatin. This drug helps reduce cholesterol levels. Statins reduce cholesterol levels by inhibiting a specific protein involved in cholesterol synthesis.
