Vegan Quiche: Our best recipe!

An easy, quick meal, ideal for brunches, picnics, Spanish inns, impromptu meals, or simply to accommodate leftovers, the quiche can be declined in a thousand and one recipes. But how do you make this egg, butter and cream dish vegan? Here we will offer you different alternatives and especially OUR best quiche recipe!

The basic ingredients of the quiche: not so vegan!

The classic quiche recipe is made with flaky or shortcrust pastry, rich in butter, and a body composed mainly of eggs and cream. In short, foods that are not at all part of of the vegan diet excluding any product from the animal world. But how do you transform this recipe to make it vegan while still keeping the taste of the quiche?

  • The Paste

Making a vegan quiche dough? Nothing could be easier! Simply replace the butter with olive oil and you're done.

To add a little extra flavor to your quiche, you can cut your wheat flour with buckwheat flour. This will make your dish easier to digest because it will contain less gluten. For those who are gluten intolerant, you can replace all the flour with buckwheat flour.

  • The eggs

Since the body ofthe quiche is mostly made up of eggs, it is important to find an alternative to them. This is not an easy step because it may take a lot of trial and error to get the right texture. For my part, after several unsuccessful attempts, I finally found the solution: replace the eggs with silken tofu at a rate of 50 grams of tofu per egg.

In order to get the taste of egg back into your recipe, you can add a little black salt. Composed of sodium chloride, its taste is reminiscent of eggs thanks to its sulfur content.

Also note that for other recipes, if the amount of eggs does not exceed one egg, you can simplyremove it from the recipe without replacing it, which will not alter the taste or texture.

  • The Cream

To replace the cream used in the traditional recipe forquiche, simply choose a vegetable cream. If you're making a classic quiche, soy or rice cream will be the most used. If you opt for a more original quiche with cashews, for example, you can use almond cream which will go well with your preparation.

If you want to make a cream yourself, you can make cashew cream very simply. It is delicious! For this you need:

  • 400 grams of cashew nuts (soaked overnight in water)
  • 200 ml of water
  • 100 ml of olive oil
  • The juice of a lemon
  • Salt and pepper

Drain the cashews well and place them with all the other ingredients in a blender. Blend until desired texture is achieved.

Our best vegan quiche recipe, here it is!

Vegan ingredients:

For the dough:

  • 200 grams of flour (personally I use 100 grams of wheat flour and 100 grams of buckwheat flour)
  • 130 ml of olive oil
  • A pinch of salt
  • 3-4 tablespoons of tempered water

For the body:

  • 150 ml of coconut cream
  • 150 grams of silken tofu
  • 1 onion
  • 500 grams of carrots
  • 1 teaspoon cumin powder
  • ½ teaspoon curry powder
  • Some pumpkin seeds
  • Salt, pepper (possibly black salt to find the taste of the egg)

Recipe for our vegan quiche:

Preheat the oven to 180°
.

For the dough:

Mix all ingredients with a fork and finish by kneading by hand until smooth.

Spread it thinly in an oven-safe pan
.

For the body:

Peel and grate the carrots.

Chop the onion.

Fry the onions for five minutes in a little olive oil.

Add the grated carrots and cook for another 8 to 10 minutes.

Drain.

Beat the coconut cream and silken tofu and add the spices.

Cover the dough with the body and sprinkle with pumpkin seeds.

Bake for 25 minutes.
