Find your balance for the end of the year meals.

When we are used to having a strict and rather healthy diet in our daily lives, the end of year celebrations can quickly become frightening or scary. The race for perfection can make us panic and prevent us from fully living this moment. Obviously, the balance of a healthy life teaches us to allow ourselves moments of pleasure in life. Generally, the vacations or the end of the year are a time to relax, to let go of road obligations but also to accept pleasure. Indeed, Christmas Eve tables are often well filled with luxurious foods but also with very fatty and very sweet dishes.

While some people indulge in the pleasures of the table a few days a year, with full awareness and acceptance of the present moment; others will always prefer to support a rather healthy course of action by filling their plates with "healthy" foods. It is a choice! Let's respect each other's choices with kindness.

However, if you prefer healthy recipe ideas for a "Healthy" Christmas Eve, here are some ideas:

Very often, the starter is composed of all kinds of toasts where foie gras and smoked salmon are often the first place of the podium. Both of these foods often work very well but let's face it, they are a little greasy. You can offer your guests different but equally tasty foods.

The scallop carpaccio

This appetizer will be a great success because this very fine dish is generally appreciated by all without weighing down the digestive system. How to prepare it?

Go to your fishmonger and ask for some fresh and already cleaned scallops.

Using a knife, slice thin strips of scallops as gently as possible and in the opposite direction of the fiber. The thinner the slices, the tastier the plate.

Make a reservation.

At the same time, prepare a mixture of organic, first cold-pressed olive oil and an untreated lemon in a bowl. Mix these two ingredients in equal parts and then brush your scallop carpaccio.

Finally, sprinkle your plate with salt and Sichuan pepper according to your taste.

This very light starter will allow your guests to spend a very pleasant and light moment at the table.

The shell farandole

For the rest of the meal, still in a healthy non-vegetarian trend, I suggest a meal based on fresh not frozen shellfish. Hard-shelled seafood is delicious simply sautéed in a drizzle of olive oil with fresh crushed garlic. This recipe is very simple to prepare and tastes great with steamed vegetables. By drizzling them with vegetable oil rich in omega 3, the vegetables will provide essential vitamins and nutrients for vitality and health. A delicious meal that will not bring you any digestive discomfort to celebrate the evening at its best and that, in addition, will not make you fat.

Holiday sweetness

Of course, a holiday party means dessert. We now know that fruit is not easily digestible at the end of a meal, so why not try a lightly sweetened lemon sorbet or, for those with a sweet tooth, an apple crumble. Indeed, cooked fruits are more digestible and therefore more interesting to finish a meal.

What makes a crumble tasty is its crust. To make it greedy and healthy, we will work with a mixture of organic almond powder, coconut flower sugar and unrefined coconut butter. Mix all ingredients by hand to achieve the desired text. Your guests might get a refill...

Finally.....

At the end of the year, we tend to fill our glass with alcoholic bubbles. What if this year, we tried to reduce our alcohol consumption? Is it really necessary?

End the year with a fruit kefir, a naturally fizzy drink rich in prebiotics.

Bon appetit and good preparation for the upcoming festivities ....
