Fruit kefir: the healthy drink that bubbles

Fruit kefir is a fermented beverage made from kefir seeds. These fruit seeds are living organisms that have the appearance of small gelatinous balls that clump together with each other. As a living material, kefir requires special care and hygienic handling.

When treated with knowledge and evolved in an ad hoc environment, the kefir seeds multiply and their symbiosis allows them to be grown over time.

The health benefits of fruit kefir

In addition to the gustatory aspect of this slightly fizzy drink, fruit kefir brings many qualities to the body. Indeed, this drink is saidprobiotic and would therefore have a very positive effect on the digestive system. Thanks to its living micro-organisms, kefir allows for intestinal sanitation and a rebalancing of the microbial flora.

Therefore, when a beverage such as kefir becomes part of the daily routine, one quickly perceives abetter state of beinggeneral. Indeed, by acting on the intestinal microbiota, one allows an improvement of the various evils on the digestive sphere, but also an improvement of the immune system.  

Also considered a super food, fruit kefir is composed of many vitamins, minerals, amino acids and enzymes that are very interesting for the balance of our health.

Fruit kefir: what dosage is recommended?

Everyone can drink up to 1 liter per day to enjoy the therapeutic benefits of the drink. Nevertheless, each individual will react individually to thisbeverage. Some may see, at first, disorders appear digestive diarrhea type. If this is your case, decrease the dose at first and increase it little by little over the days.

Fruit kefir: how to prepare it.

  • In a sterilized glass container, carefully place 50 to 60 grams of fresh kefir grains.
  • Place 2 dried figs from organic farming. (or any other dried fruit)
  • Add 2.5 tablespoons of whole cane sugar such as "rapadura".
  • Place 1 or 2 slices of lemon, an organically grown fruit.
  • Pour 1.5 liters of spring water (low mineralized*).
  • Cover the container with a clean cloth and leave to ferment for 48 hours in a dry place away from the sun.

At the end of the 48 hours, check if the dried fruit floats. If it does, it indicates that your drink is successful and ready to be filtered. The conservation of the beverage will only take place in the refrigerator for a maximum of 4 days, to preserve the therapeutic benefits of the drink.

*The kefir does not like overly mineralized water that alters its vital balance.

Fruit kefir: the growth of seeds.

Once the drink has been filtered in a strainer, the seeds can be harvested for further preparation. To do this, simply rinse the kefir grains with spring water (kefir does not appreciate the chlorine present in tap water), place them in a glass jar and add whole cane sugar.

With this method, the seeds will multiply and allow active fermentation.

If you do not wish to create multiplication, simply leave the seeds in pure spring water.

In order to respect the rules of hygiene, remember to change the water in your kefir grains every week.
