The excessive consumption of table salt (Sodium - Na) and its presence in our food as a taste enhancer means we need to be more vigilant about our salt intake.
Ciao le sel! are table condiments designed to stimulate the salty taste receptors by enhancing olfactory and gustatory flavors.
A synergy of aromatics with properties chosen to :
- Replace some of the effects of salt (taste enhancer): low in sodium and high in K, Ca, Mg
- Meet a need for gustatory satisfaction to replace that provided by salt; foods with an appetizing flavor, offering a pleasurable effect in the mouth): Umami and Kokumi; odor: volatile fraction of essential oils, pungent sensory effects (pepper, chili pepper, paprika)
- Amplify the salty taste present in small quantities: Umami and Kokumi, odors identified by the brain as those of salty foods (e.g. oregano-pizza pairing).
