Sesame seeds are rich in minerals, vitamins, unsaturated fatty acids and other vegetable substances useful for health. They have a pleasant nutty taste and can be added to many preparations (sauces, salads and desserts, on breads, biscuits and confectionery ..). Lightly toasted and finely ground they give the well known tahini paste.
Sesame seeds are rich in calcium, magnesium, phosphorus, potassium, iron and so they are remineralising and recommended in case of fatigue, and to pregnant women, athletes and convalescents. They dissipate get downs and sudden bouts of fatigue and, thanks to the lecithin of their lipids, are beneficial to the nervous system. In addition, they help to release the intestines with their mucilages, contain tocopherols (antioxidant compounds which can form vitamin E) and are among the foods that are the richest in phytosterols and lignans. The latter ones are also antioxidants and protect from damage caused by free radicals, which are highly reactive molecules that appear to be involved in the development of cardiovascular diseases, certain cancers and other diseases associated with aging. Phytosterols are beneficial to cardiovascular health and sesame lignans appear to reduce blood lipids (total cholesterol and LDL ("bad") cholesterol) and blood pressure in hypertensive patients, enable to better enjoy the benefits of vitamin E (anti-inflammatory, antiplatelet and vasodilatory (ie cardioprotective) and antioxidant properties, alleviation of menstrual problems, enhancement of the immune system ...) and play a role similar to that of estrogen, hence the name of phytoestrogens. Let us recall that phyotestrogens become, thanks to some digestive enzymes, activ estrogens similar to those produced by the ovaries and that their regular consumption does not appear to increase the risk of breast cancer and may reduce various symptoms associated with pre-menopause (e.g. hot flushes) and protect men from prostate cancer by blocking the negative effects of testosterone.
As for chia seeds and unlike those of lin, sesame seeds can be eaten unground to enjoy their beneficial properties.
