Kamut Khorasan wheat is a variety of very ancient easily digestible durum wheat rich in protein, fibres and minerals, especially magnesium, selenium and zinc, and less allergenic than usual wheat.
Kamut Khorasan wheat grains are consumed warm as accompaniment, garniture or gratin , or cold in salads. Ground to meal they are incorporated in preparations as a complement to the usual meals. Kamut Khorasan wheat is an ancestor of durum wheat and their viscoelastic properties are limited, so it is difficult to use their meals as single ingredient for breadmaking.

Properties

Khorasan kamut wheat contains a surplus of 20% to 40% proteins, more lipids, essential amino acids, vitamins and minerals as ordinary wheat, and in its complete form contains at least as many fibres. Selenium for example, in which Khorasan Kamut wheat is particularly well supplied, helps fight free radical formation and the onset of cardiovascular disease and the richness in magnesium, potassium and zinc helps to counteract stress and fatigue.

Typically, a high-fibre diet can contribute to a regular intestinal transit, to the prevention of cardiovascular diseases, the control of type 2 diabetes and to a lower risk of colon cancer, a greater feeling of fullness.

Recommendations for use

Soak the Kamut wheat grains 12 hours to reduce the cooking time. After that wash them, optionally toast them dry in a pan without burning the grains, and immerse them into 3 times their volume of water, salted as desired. Gently bring to a boil, simmer for 45 minutes and season to taste.

Precautions for use

Possible traces of mustard, lupin, nuts, sesame and soy, contains gluten.
Keep cool (temperature below 20 ° C) and protected from light, in well closed packing.
Since Khorasan wheat contains gluten such as barley and rye, Khorasan wheat and all derived products are not recommended for people with celiac disease.
