Kamut Khorasan wheat is a variety of very ancient easily digestible durum wheat rich in protein, fibres and minerals, especially magnesium, selenium and zinc, and less allergenic than usual wheat.
Kamut Khorasan wheat grains are consumed warm as accompaniment, garniture or gratin , or cold in salads. Ground to meal they are incorporated in preparations as a complement to the usual meals. Kamut Khorasan wheat is an ancestor of durum wheat and their viscoelastic properties are limited, so it is difficult to use their meals as single ingredient for breadmaking.
