These barley flakes, as precooked with steam, can be eaten without cooking, eg in hot or cold milk for breakfast. But these flakes can also be eaten mixed with eggs, chopped vegetables and spices, as thick pancakes cooked in a nonstick pan, or be incorporated into breadpreparations or used as main ingredient in biscuits, macaroons...The advantage of barleyflakes compared to barley grainss is that the nutrients can then be easier absorbed by our body and that they only require a short time for cooking (even simmering is not necessary).
Barley is a moderately aromatic cereal with a high swelling capacity and a typical not very pronounced taste. It is ideal for soups, salads, vegetarian steaks, cereal dishes and also excellent in spicy souffles and as accompaniment or dessert (e.g. barley porridge with dried fruits).
Barley contains several elements which allow to reduce LDL cholesterol (this cholesterol causes damages to the blood vessels which can lead to heart attacks and cerebrovascular accidents). Barley is also an extraordinary regulator of the intestinal functions and relieves from constipation. Its softening, emollient, diuretic, detoxifying and mucosal regeneration stimulating properties are also good for cough, sore throat, inflammations of the stomach and intestines. Germinated 'naked barley acts on the bronchi and relieves asthma.

Barley is a graminous plant whose various species make up the genus Hordeum. Common barley (also named covered barley), is wrapped in a thick, hard strawy and fibrous outer hull adhering to the grain. This hull comes off from itself for naked barley, but common barley must be peeled by an incomplete milling which results in hulled or peeled barley or barley groats, and, at a further degree of hulling/milling, in pearl or pearled barley. So Hulled barley is the least processed form of common barley, with just the outermost hull removed and it is also the most complete common barley, but germ and outer layers of the grain may be damaged by the milling procedure. For pearl barley there is total removal of the envelope, leaving only the endosperm. Barley
NB Barley gruel means crushed hulled or pearled barley and, with gruel of buckwheat and oats, belongs to the oldest used gruels in our countries.
