Tapioca is a starchy, powdery (or pearly) extract of dried Manioc treated for save consumption. Tapioca is very useful to thicken soups, stews, puddings, desserts (e.g. cooked in milk) because it takes on the flavor of the food which it is added to. Its cooking is simple, but it is necessary to stir to avoid lumps. Tapioca can replace meal containing gluten in the case of a gluten-free diet.
Cassava (Manihot esculenta), also called yuca, mogo, manioc, mandioca, and kamoteng kahoy, a woody shrub of the Euphorbiaceae (spurge family) native to South America, is extensively cultivated as an annual crop in tropical and subtropical regions for its edible starchy, tuberous root, a major source of carbohydrates. Its dried extrakt is called tapioca and its fermented, flaky version is named garri. Cassava root is a good source of carbohydrates, but a poor source of proteins so a predominantly cassava root diet can cause protein-energy malnutrition. Improper preparation of cassava can leave enough residual cyanide to cause acute cyanide intoxication and goiters, and may even cause ataxia or partial paralysis. In Brazil detoxified manioc roots are ground to a pulp called a massa and squeezed with a device called a tipiti to dry it out. The liquid produced by this is collected and dried to produce tapioca, locally known as polvilho, while the dried massa is toasted over a large copper stove to produce a dried crunchy meal called farinha de mandioca.

Recommendations for use
Pour 1 liter of milk in a pan, add a pinch of salt and 2 coffeespoons sugar (or dried fruit). Bring the mixture to a boil. Then add the tapioca as rain, stir and cook gently for 10 minutes. Stir over low heat until the desired thickening.
