Long grain whole Black Rice of Thailand is a very particular rice, because of the characteristic ebony colour of the pericarp, its slightly sweet hazelnut-like taste and its aroma that reminds of freshly baked bread. As an accompaniment or in risotto, an exotic delight.
The colouration of the grain is due to natural pigmentation of the outer rice pellicle. As this rice is only husked and not polished, not only its special black colour, but also all valuable nutrients of whole grain rice are preserved. Scientific analyses of black rice found antioxidants (including anthocyanins) in substantial quantities, which would give this type of rice several medicinal properties (anti-cancer, protection of blood vessels...) even more important than those of "brown" rice. Of course it contains no gluten.
Black rice has been known for centuries in Orient. In ancient China, because of its rarity and peculiarities, it was reserved to noble families and known as "Forbidden rice" or "Emperors rice". Notice that in Spain and Italy there is a so called "black rice" which is normal rice coloured black with cuttlefish ink and obviously has neither the taste nor the nutritional/medicinal properties of black Piemont rice.
Organic whole rice is important for our health because it is easily digestible and rich in precious nutrients and its proteins are gluten free. As a wholegrain rice this black rice requires a cooking time of about 40 minutes.

Black rice is attractive as garnish, in salads, risotto and all rice dishes that support a touch of dark colour.
Recommendations for use
Basic preparation: bring to boil 1 cup of washed rice with 3 to 4 cups(or 1 to 2 if you prefer it less done) of slightly salty water or broth. Cook over low heat on a flame diffuser for 45 to 60 minutes.
Precautions for use
Store in a cool and dry place, in a closed packing.
