My anti-aging and anti-aging bread recipe and my breakfast tips!

In a previous post, I told you about my bread, which I made myself 3 times a week. Indeed, like many people, I bought a machine to make bread by myself... Except that I only use the "dough making" part because I bake it myself.

Here is my recipe

You put the following ingredients in the machine and press the "dough" program:

  • 350 ml of pure filtered water
  • 525g of organic wholemeal spelt flour (you can easily find it in organic stores - just ask for "wholemeal organic spelt")
  • spelt or wheat leaven (also available in organic stores) 20 g
  • 2 tablespoons of brown sugar or honey
  • 1 tablespoon of salt (preferably from Guérande)
  • 3 tablespoons of olive oil

Why this recipe and why is it anti-aging?

It is after a lot of trial and error that I came to use wholemeal spelt, which has interesting properties in terms of nutrition and health (no gluten allergy, no GMO yet...); it is true that cereals in general are disputed by many nutritionists but for those who like bread, my recipe is a good compromise because it is totally organic, natural, and the bread keeps for a week in the refrigerator.

Why do I bake bread in the oven and not in the machine?

Because I like to give my bread different shapes and by making loaves you can get more outer crusts.... Place the loaf(s) in the cold oven at 140 degrees for 35 to 40 minutes.

In terms of glycemic index and calorie intake, it is also a good compromise because the body consumes almost as many calories digesting the bread as the calories ingested... so for those who don't want to gain weight, this bread is "diet".

On the other hand at breakfast, I prefer with my coffee and bread, goat cheese with small green onions or chives ; this avoids cow's milk, fast sugars and with one or two good slices of my bread we "hold" easily until lunch without wanting to nibble.

Moreover, the breakfast is well balanced with slow sugars, proteins (goat cheese) and greenery with small onions or chives.

I only take my fruit juice late in the morning to avoid a mini blood sugar spike in the morning. If you don't like goat cheese, it can be replaced by other proteins (non-GMO soy, sheep cheese, mare's milk for example) but I don't recommend cow's milk or cheese made with cow's milk.
